"Su Filindeu", "threads of God" the dish I will tell you about, is linked to the religious tradition of Lula, a village in Barbagia. In honor of St. Francesco every 1st May and 4th October there is a suggestive procession to the sanctuary of the village, about 30 Km. from Nuoro.
According to tradition, the food offered is precisely "Su filindeu". It is a sheep's broth in which a very special pasta is cooked, which is prepared in the days before the party.
The processing of this pasta is long and complex but the result is unique. The ingredients of the soft dough are simple: semolina, water and salt.
